Crispy Chicken Burgers
Crunchy Parmesan-breadcrumbed chicken breasts in a toasted bun with lettuce, tomato, and garlic mayo. Satisfying and easy to put together.

Ingredients
For the chicken
- 4 chicken breasts (skinless, boneless)
- 110g breadcrumbs
- 40g Parmesan (finely grated)
- 1 tsp smoked paprika
- 50g plain flour
- 4 eggs (beaten)
- 2 tbsp vegetable oil
- Salt and black pepper
For the garlic mayo (optional)
- 4 tbsp mayonnaise
- 1 clove garlic (minced)
- 1 tsp lemon juice
To serve
- 4 burger buns (brioche work well), toasted
- 4 leaves Little Gem lettuce
- 2 tomatoes (sliced)
Method
1. Prepare the chicken
- Place each chicken breast between two sheets of cling film and bash with a rolling pin to an even thickness of about 2 cm. This ensures even cooking and fits the bun better.
- Season the flour50g plain flour with salt and pepper and spread on a plate. Beat the eggs4 eggs (beaten) in a shallow bowl. Mix the breadcrumbs110g breadcrumbs, Parmesan40g Parmesan (finely grated), garlic1 clove garlic (minced) granules, and smoked paprika1 tsp smoked paprika on a third plate.
- Dip each breast in the flour50g plain flour, then the egg, then the breadcrumb mixture, pressing firmly so the crumbs adhere. For extra crunch, dip back through the egg and breadcrumbs110g breadcrumbs a second time.
2. Cook the chicken
- Heat the oven to 200C fan. Heat the oil in a large ovenproof frying pan over a medium-high heat.
- Fry the chicken for 2-3 minutes each side until golden and crisp. Work in batches if needed to avoid crowding the pan.
- Transfer the pan to the oven (or move to a baking tray) and cook for 12-15 minutes until cooked through with no pink remaining.
3. Make the garlic1 clove garlic (minced) mayo and assemble
- Stir the mayonnaise4 tbsp mayonnaise, garlic1 clove garlic (minced), and lemon juice1 tsp lemon juice together and season to taste.
- Spread garlic1 clove garlic (minced) mayo on the cut sides of each toasted bun. Add a lettuce leaf, a slice of tomato, and the chicken. Top with gherkins if using.
☘ Tip
Air-fryer alternative: Spray the breaded chicken lightly with oil on all sides. Air fry at 190C for 18-20 minutes, turning once halfway, until golden and cooked through.

Season aggressively at the flour50g plain flour stage — this is your main chance to get salt into the coating.
